Green spaghetti? For a picky eater…. did I mention a toddler? Ehhhh I don’t think so… BUT guess again! This is one of my son’s absolute favorite pasta dishes. I know what you’re thinking , “it’s green so how did you even get him to try it?”.

Well lucky for me my son loves anything pasta and the color for some reason, despite it being green did not throw him off.

Now I know you’re all probably asking, well what is it ? Is it pesto? No it’s not… it’s …..SPINACH!!! Yes you guys read that right it’s a spinach and cheese sauce that we just mix in with some spaghetti and devour it every single time. My son absolutely loves it and I’m so happy he does because it’s the ONLY way he will have anything green. He’s getting his veggies in while enjoying some spaghetti. The recipe is so simple and takes under 20 minutes to make. I’m not a chef but this here is such a hit in our home, it’s become a staple food for us. I will share the recipe below. Please TRY it and when you do let me know how it goes.

Spinach Sauce Ingredients:

1 bag of baby spinach

1/2 cup of shredded cheese (your choice- we use mozzarella or Mexican mix)

1. Cook the baby spinach by simply boiling it for about 3-5 minutes.

2. Once cooked, drain most of the water but leave about 4 tablespoons worth of the water. Let it cool off for about 5 mins.

3. Once the spinach is cooled off, place it in the blender with the left over water. Add the cheese at this time as well. Blend the ingredients together. TA-DA! You have a spinach and cheese sauce to mix with your pasta.
